A Golden Boost for Your Lunch

This quinoa chickpea bowl is a wholesome mix of protein, veggies, and herbs, finished with the earthy warmth of Warm Wild Long Pepper. A teaspoon of Golden Lakadong Turmeric gives the dressing a vibrant golden hue, and Ground Natural Makhir Ginger ties the flavors together.

Ingredients

  • 1 cup cooked quinoa (or brown rice or farro)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups chopped vegetables (broccoli, carrots, zucchini, bell peppers, cucumbers)
  • ¼ cup chopped fresh herbs (cilantro, parsley, or a mix)
  • ¼ cup crumbled feta cheese (optional)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt to taste
  • Freshly ground Warm Wild Long Pepper or black pepper, to taste
  • 1 tsp Golden Lakadong Turmeric
  • ½ tsp Ground Natural Makhir Ginger

Directions

Cook the quinoa: Prepare according to package instructions and let it cool slightly.

Roast the chickpeas: Preheat oven to 400°F (200°C). Toss the chickpeas with 1 tbsp olive oil, salt, and pepper. Roast 15–20 minutes until golden and crispy.

Combine: In a large bowl, combine the quinoa, roasted chickpeas, and chopped vegetables.

Make the dressing: Whisk together the remaining olive oil, lemon juice, turmeric, ginger, salt, and pepper.

Assemble: Drizzle the dressing over the bowl and toss to coat. Top with fresh herbs and feta, if using.
