My Mother's Lime & Peanut Rice/Quinoa

  • Lime Peanut Quinoa Rice made with Humble Origins Superfoods Healing Lakadong Turmeric and Warm Wild Pepper in a white plate garnished with cilantro.
  • Ingredients

    Pre-cook 1 cup Rice and 1/2 a cup quinoa and keep aside
    Dry roast 3/4 cup of peanuts and set aside
    1 TBS Oil ( I need avocado or grapeseed)
    1/4 tsp Hing
    1/4 tsp mustard seeds
    1/4 tsp cumin seeds
    1 slit green chilli
    2 dry red chilies
    7-8 curry leaves
    1/2 tsp Healing Lakadong Turmeric
    1/2 tsp salt ( add more as needed)
    1/2 Lime
    Cilantro to garnish

  • Directions

    Heat oil and once it heats up add the mustard seeds, cumin seeds, hing. Saute for a few seconds
    Add the green chillies, red chillies and the curry leaves - Saute for another 2-3 minutes
    Add the Rice and Quinoa - Mix well
    Add the Lakadong Turmeric, Salt and Lime. Mix well for a 2 minutes
    Add the peanuts and cilantro to garnish

    Add salt to taste
