Spicy Tofu Bhurji (Scramble)

    2 firm tofu blocks, drained and crumbled
    1 medium onion, diced
    2 Thai chilies, chopped (adjust for your spice preference)
    1 tablespoon avocado oil (or oil of your choice)
    2 teaspoons Lakadong turmeric
    1 teaspoon cumin powder
    1 teaspoon coriander powder
    1 teaspoon ground long pepper
    1 teaspoon garam masala
    1/4 cup nutritional yeast
    1 teaspoon salt (to taste)
    Fresh cilantro, chopped (for garnish)
    Toast (for serving)

    Prep the tofu: Crumble the drained tofu blocks into a bowl using your hands or a potato masher.
    Spice it up:
    Add all the dry ingredients (except nutritional yeast) to the crumbled tofu. Mix well to coat the tofu with the spices.
    Sauté the base:
    Heat oil in a pan over medium heat. Add the diced onion and chopped chilies and sauté for 2 minutes, until softened.
    Cook the tofu:
    Add the seasoned tofu to the pan with the onions and chilies. Mix well and cook, covered, for 10 minutes. Stir occasionally to prevent sticking.
    Finishing touches:
    Stir in the nutritional yeast and cook for another 5 minutes. Season with salt to taste.
    Serve and enjoy!
    Garnish your delicious tofu scramble with fresh cilantro and serve it on toast. Hash browns and a cup of chai make perfect accompaniments for a complete brunch experience.
