What Makes Makhir Ginger Different

Makhir ginger (Zingiber rubens) is a distinct variety native to the hills of Meghalaya. It is known for:

  • A deeper, brighter aroma with citrusy notes
  • A sharper, more pronounced heat
  • A bold flavor, so a little goes a long way

How It Cooks

Because the flavor is stronger, start with a smaller amount than you would of regular ginger and adjust to taste. Makhir ginger works in teas and warm drinks, kadhas, soups, marinades, dressings, and baking.
